Start with how the door opens. Quarter turn locks and compression latches open with an insert, key, wing knob or T handle, and the compression latches are rated IP65. Swing handle locks and lever latches open with a handle.

Yes. Stainless steel versions include 1401 quarter turn locks, 1427 compression latches in 316 grade and 1120 swing handles in 304 grade. Some draw latch handles and slam latches come polished in stainless steel 316.
They are specified differently. Most compression springs give travel, initial force and max force. Tension springs give a free length and an extended length. Disc springs give outer diameter, inner diameter and thickness.
