Pan capacity has to exceed what is coming out, and by more than seems necessary. Oil drains faster than expected once the plug is clear, and a pan filled to its rim is far harder to move without spilling than one that is half full. A pan with a spout also pours out more cleanly than one that has to be tipped over its rim.
Fluid matters as well as volume. Antifreeze pans are held separately because coolant has to be kept apart from oil for disposal, and mixing the two means neither can be handled as it should be. That is a workshop practice question rather than a material one. Colour is used to keep the two apart on a busy floor, with pans held in black and green.
Pan form follows where the fluid is coming from. A wide shallow pan catches a sump that drains over an area. An axle pan at 2L is narrow and sits under a differential or a gearbox where a wide pan will not fit between the chassis members. Wheels matter more on the larger pans, since a full 16L pan is not something to carry.
Getting the waste away is the stage after draining.
